VEGETABLE BIRYANI..INSTA POT WAY


Vegetable Biryani ..a one-pot vegetarian meal is made of pressure cooking rice and vegetables with onion and spices with in half an hour time..


Materials..

  • Rice grains..1 cup
  • Vegetables chopped in to small cubes..potatoes
  • Frozen vegetables 1 cup
  • Onion...1 big sliced  
  • Green chillies..4 to 5 no.s 
  • Corriander leaves..one handful 
  •  Jeera..1tsp
  •  Cardmom..cloves.. a few each up to 10 no.s
  • Cinnamon..1 inch stick
  •  Ginger garlic paste..1 to 2 tsp
  • Turmeric powder..1/ 2 tsp
  •  Chilli powder..1 tsp
  • Salt..to taste 
  • Garam masala powder..1 and 1/4 tsp..depending on spice eating levels.
  • Yoghurt..2 tbsp 
  • Lemon juice..1 tsp
  •  Water.. 1 & 3/4 cup( same measuring cup for rice and water)

 Method..6
  • Add oil 4 tbsp and 1 tbsp ghee.. to the Instapot pan..turn saute..wait till the display reads "Hot".
  • Add  jeera..cardmoms..cloves and cinnamon spices to the ip pan and fry for half minute.
  • Next add onion slices and saute  till transculent.. 
  • Next add potato cubes and fry..after 2 minutes add frozen vegetables and green chillies..
  • Add ginger garlic paste and mix well..
  •  Next add turmeric powder,and chilli powder and garam Masala powder, salt and fry..
  • Next add handful corriander leaves and saute. 
  •  Add 2 tbsp curds/ yoghurt and saute well.
  • Add washed rice and mix well. Fry for 2 to 3 minutes.
  • Next add water.. My Rice water ratio is 1: 1& 3/4..                                 but ideal is 1:1&1/2..
  • Lastly add 1 tsp of lemon juice to the IP pan. 
  • Mix well..turn off..cancel saute now..
  • And.. turn to ..manual for 8 minutes in high pressure.  

  • After done..5 minutes after the beep..Quick release the extra pressure and open the lid..Mix gently..Serve Hot with onion yoghurt chutney..
