Potla kaya..Snake-Gourd stir fry is a recipe very easily done and a choice for every days menu..
Materials..
Over to video...


Potla kaya/snake-gourd.. Chopped Salt..To taste

For seasoning.. Oil..3 to 4 tbspUrad dal..1 tbspJeera..1 tspRed chilli..4 to 5 no.s...make slitsGreen chilli 5 no.s...Make slits.Asafoetida..A pinchTurmeric powder..1/4 tspCurry leaves.. 1 tbsp. Chopped pieces
Method... Add 1 tsp salt to the chopped potla kaya and press and squeeze them so excess water is out..Keep the squeezed pieces aside..
Switch IP ..turn to Saute mode..Add oil ..after its On ..After its heated add seasoning materials,and fry.. after done add chopped potla kaya pieces and stir fry for 5 mins.Switch off the IP..


Now close the IP lid..And manually set to pressure cook for 5 minutes,closing the Vent..
The chopped pieces will be cooked and become soft by this.. after done..Leave for 10 mins,then pressure release and open.Turn Saute and stir fry,if any water left..…

SNAKE-GOURD CURRY/POTLAKAYA KURA

SNAKE-GOURD CURRY/POTLAKAYA KURA


INGREDIENTS:
Snake gourd/Potlakaya-2 cups
Chopped in to pieces
Oil 2 tbsp
Urad daal 1tsp
Channa daal 1 tsp
Mustard seeds 1/4 tsp
Red chilli 3 nos
Made in to slits
Green chilli 2to 3 nos-slits
Hing optional
Curry leaves
Chilli powder 1/4 th  tsp
Turmeric powder 2 pinches
Salt
METHOD:
Add 1/2 tsp salt to the chopped snake gourdpieces,mix well,keep it aside  for 5 minutes.
Now press the chopped  pieces well for 2 to 3 minutes,with your hand and squeeze out /remove the water.
Place the squeezed pieces in a bowl aside. Now place a kadai on the stove with oil in it.
After the oil gets heated add urad and channa daals,mustard seeds,red chilli slits one by one.
After they splutter add green chilli slits and curry leaves and mix well.
Now add the squeezed snakegourd pieces,turmeric powder,mix well,and place the lid.And cook in a low flame,by placing the lid ,the curry will be cooked with water vapour.


After 10 minutes add required  salt and chilli powder too,and mix well.Let it simm…

POTLAKAYA PERUGU PACHHADI

Materials:


Potlakaya ..finely chopped pieces..  1 cup

Curds ..2 cups
Salt..To taste Seasoning:

Oil.. 1 to 2 tbspMustard seeds ..1 tspMethi seeds ..a pinchRed chillies ..2 nos..make slitsGreen chillies.. 4 to 5 nos...slitsCurry leaves..Chopped.Hing... a pinch
Method:

Chop potlakaya...(snake gourd) into small pieces .Place a pan on the stove add 1/2 tbsp of oil and after heating add chopped potlakaya pieces and saute well in  low temp with a lid on it .It will take above 10 mins to cook itself  in water vapour.After the vegetable  pieces are cooked and become tender switch off the stove and keep them aside.Next place a pan with remaining oil for seasoning , and add mustard seeds,methi and redchilli slits ,hing ,and haldhi ,saute well.Next add green chilli slits and curry leaves ,mix well,switch off the stove after it is done.Let it cool.After it is cooled,add the seasoning and the vegetable potlakaya mixture in the curds.Mix well,and add kothmeer …
